Crockpot Honey Dijon Chicken Freezer Meal


As I was organizing my kitchen, I stumbled upon a realization: I never shared one of my all-time favorite freezer meals during my freezer meal series months ago!



Today, I'm excited to rectify that and introduce you to a true gem: Crockpot Honey Dijon Chicken.


This recipe has been a lifesaver for busy days, and it's incredibly easy to prepare. Because it’s so good it’s become a family favorite The combination of honey, dijon mustard, and aromatic thyme creates a flavor profile that will tantalize your taste buds. Simply thaw the night before cooking, and you'll have a delicious meal waiting for you the next day.

Ingredients:

- 1.5 pounds of boneless, skinless chicken breasts (whole or cubed)

- ¼ cup honey

- 2 tablespoons Dijon mustard

- 2 teaspoons black pepper

- ½ teaspoon salt

- ½ teaspoon ground thyme

- ½ cup water for cooking day

Instructions:

1. Begin by assembling your ingredients and ensuring your freezer bag holders are ready for use.

2. Take a gallon-sized resealable freezer bag and place it securely in the freezer bag holder.

3. Add the chicken breasts to the bag, arranging them in a single layer.

4. Dump the honey, Dijon mustard, black pepper, salt, ground thyme, and water into the bag.

5. Massage the ingredients together in the bag until the chicken is evenly coated and the seasonings are well distributed.

6. Seal the bag tightly, removing as much air as possible, and label it with the cooking instructions and date.

7. Place the bag in the freezer until you're ready to cook.

8. On the night before cooking, remove the bag from the freezer and place it in the refrigerator to thaw overnight.

9. In the morning, empty the contents of the bag into your crockpot and add the 1/2 c water.

10. Give everything a gentle stir to combine, then cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and cooked through. Chicken needs to have an internal temp of 165° to be considered done.***

11. Once cooked, if you left breasts whole, shred the chicken directly in the crockpot using two forks, allowing it to soak up the flavorful sauce.

12. Serve the Crockpot Honey Dijon Chicken over cooked rice, accompanied by a side of steamed broccoli, and enjoy the delicious flavors!
