Dressing/Marinade:

- 1 tablespoon honey

- Zest of 2 lemons

- 1 garlic clove, minced

- 2 teaspoons dried oregano

- 1 teaspoon dried basil

- Kosher salt, to taste

- Kosher pepper, to taste

Quinoa Bowls:

- 1½ cups quinoa, uncooked

- 2 cups chicken broth

- 4 chicken breasts, boneless, skinless

- 1 English cucumber, diced

- 4 Roma tomatoes, chopped

- 1 red onion, medium, diced

- 1 cup feta cheese, crumbled

- 1 cup kalamata olives, pitted

Instructions:

1. Prepare the Quinoa: Rinse the quinoa thoroughly, then cook it in a pot with 2 cups of chicken broth over medium heat for 12-15 minutes, until tender. Set aside to cool slightly.

2. Make the Dressing/Marinade: Utilizing high-quality olive oil, such as Kasandrinos Olive Oil, combine it with lemon juice, honey, lemon zest, minced garlic, dried oregano, dried basil, salt, and pepper in a small jar. Shake vigorously to blend the flavors seamlessly.

3. Marinate the Chicken: Pour about 1/3 of the marinade over the chicken breasts, ensuring they are thoroughly coated. Set aside the remaining marinade for dressing later, ensuring it avoids contact with raw meat.

4. Grill the Chicken: Heat a grill pan or outdoor grill over medium-high heat. Grill the chicken for 6-8 minutes per side, until cooked through and the internal temperature reaches 165°F.

5. Assemble the Bowls: Divide the cooled quinoa among 4 bowls. Top with grilled chicken, diced cucumber, chopped tomatoes, and diced red onion.

6. Finish with Flavor: Sprinkle crumbled feta cheese and kalamata olives over each bowl. Drizzle with the remaining dressing for an extra burst of Mediterranean flair.
